Gnocchi with Shrimp, Lemon and Oil
- 1/2 cup gnocchi
- 6 shrimp, peeled and deveined
- salt and pepper
- 2 tbsp. fresh squeezed lemon juice
- 1 tbsp. olive oil
- parmensan cheese
Place the shrimp in the Lekue Pasta steamer. Add enough water to cover shrimp. Place the lid on and cook in the microwave for 2 minutes at 800watts. Add the gnocchi to the steamer, adding water is necessary. The gnocchi should be covered with water. Put the lid on, and cook in the microwave for 4 minutes at 800watts. Remove the steamer, flip the lid and drain the water. Add the olive oil and lemon juice, directly to the steamer. Gently mix around to coat the gnocchi and shrimp. Season with salt and pepper. Sprinkle a little parmesan cheese before eating.
