Layered Vegetables


  • 1/2 small eggplant
  • 1 small zucchini
  • 1 small potato
  • 3/4 cup canned, chopped tomato
  • 1 tsp. sugar
  • grated cheese
  • salt and pepper
  • oregano


Slice vegetables about 1/4 inch thick and season with salt and pepper. Add the sugar to the chopped tomato and mix well. Place a light layer of tomato sauce on the bottom of the Lekue Steam Case. Place a layer of vegetables on top of sauce. Continue alternating vegetables and sauce, ending with a layer of sauce. Sprinkle a tsp of oregano and grated cheese. Put the case in the microwave for 10 minutes.
Remove from microwave, being careful of the steam.
Let cool for a few seconds and enjoy.
