- For 2 Servings
- 4 slices of bacon
- 1 cup mini penne
- 10 cherry tomatoes, halved or quartered
- ½ cup baby spinach
- 2 ½ tsp balsamic vinegar
- Grated parmesan, for finishing
Place the bacon on the tray in the small or large steam case. Close the lids and cook in the microwave for 4 minutes and 30 seconds at 800watts. If you want the bacon crisper, add another minute of cooking time.
Remove the steam case from the microwave and set aside.
Put the penne in the Lekue Pasta Cooker and fill with water to cover the pasta. Place the Pasta Cooker in the microwave and cook for 9 minutes at 800watts.
While the pasta is cooking cut the tomatoes.
Remove the Pasta Cooker from the microwave, flip the lid, and drain the water over a sink.
Immediately add the spinach and tomatoes to the pasta and mix.
Take the bacon out of the steam case and cut into small pieces. Remove the tray and drizzle1-2 tablespoons of bacon fat over the pasta. Add the balsamic to the pasta and mix again, season with salt and pepper.
Before serving sprinkle grated parmesan cheese on top.
