Potato Frittata

Ingredients

  • 1/2 cup sliced potatoes
  • 1/4 cup onions
  • 1/4 cup water
  • 1 tbsp. extra virgin olive oil
  • eggs
  • salt and pepper

Instructions

Slice the potatoes about a quarter inch thick and julienne the onions. Place all of the ingredients except for the eggs into the steam case, close the lid, and cook in the microwave for 6 minutes. Beat the eggs, add a pinch of salt and pepper and pour the eggs over the potatoes. Close the lids and cook for another 2 minutes.
