Red Velvet Minute Cakes
- makes 4 2 large eggs
- ½ cup granulated sugar
- 6 tbsp. vegetable oil
- 1 tbsp. red food dye- or more if you like it really red
- 6 tbsp. buttermilk
- ½ tsp. distilled white vinegar
- 2 tsp. vanilla extract
- 3 tbsp. cocoa powder
- ½ cup self-rising flour
In a mixing bowl, whisk together the eggs and vegetable oil.
Add the vanilla, granulated sugar, buttermilk, and food coloring.
Add the flour, cocoa powder, and vinegar. Mix until smooth.
Lightly oil the inside of the Lekue Minute Cake Molds. Distribute the batter evenly between the 4 molds.
In the microwave cook one cake at a time for 1 minute and 20 seconds at 800watts.
Enjoy with whipped cream or a dusting of powdered sugar.
