Stuffed Vegetables with Couscous

Ingredients

  • 1 medium white onion
  • zucchinis or yellow squash
  • 3 small tomatoes, but not too ripe
  • 1/4 cup couscous
  • 1/8 cup raisins, roughly chopped
  • 1/8 cup pine nuts, roughly chopped
  • 1 tbsp cumin
  • 3 tbsp extra virgin olive oil
  • salt and pepper

Instructions

Wash the vegetables. Cut the ends off of the zucchinis and then cut each zucchini into 3 even sections. Remove the center with a melon baller, but save the insides. Slice the top of the tomatoes off, and core the inside with a spoon being careful not to make a puncture. Save the insides.
Dice the onion and place in a small Lekue Steam Case, add 2 tbsp water and steam in the microwave for 3 minutes at 800watts. Chop the insides of the vegetables, set aside in a mixing bowl. Add the cooked onion to the mixing bowl as well. Using the Lekue Rice Cooker, make the couscous, 1/4 cup couscous with 1/4 cup water for 2 minutes at 800watts. Once cooked, set aside. Add the couscous, raisins, pine nuts, cumin, salt and pepper to the chopped vegetables. Mix together. Spoon the couscous mixture into the cavities of the vegetables. Pour 1/4 cup water into the bottom of the steam case fitted with the tray, place the stuffed vegetables on top, close the lids and cook in the microwave for 5 minutes at 800watts. If the vegetables aren’t quite done, cook for 30 second intervals until vegetables are tender.
