Carrot Cake

  • Serves 5
  • 1 large or 2 small carrots, finely shredded
  • 1/3 cup of almond butter
  • 1 egg
  • 1 ½ tbsp. honey
  • 1 tbsp. coconut flour
  • 1 tsp. cinnamon
  • ¼ tsp. baking powder
  • pinch of salt
  • ¼ cup raisins


Mix the shredded carrots, almond butter, eggs and honey in a large bowl. Next add the coconut flour, cinnamon, baking powder, and salt. After all of the ingredients are incorporated, fold in the raisins. Spoon the entire mixture into the Lékué steam case and microwave for 2.5-3 minutes. Flip the cake onto a cooling rack and cut into 5 equal pieces after cooling. Enjoy!
