- 6oz. or 16 Small shrimp, peeled/tail on
- Juice of 1 lime
- 2 tbsp. Fresh cilantro (if using dried, use only 1 tbsp.)
- 1 tsp. Extra virgin olive oil
- Pinch of salt and pepper
Roughly chop the cilantro.
Place the shrimp in a small bowl, squeeze the lime juice over the shrimp, and add the chopped cilantro. Let sit for only 1 minute.
Pour everything into the Lekue Steam Case fitting with the tray. The oil and lime juice will fall underneath leaving the shrimp on top.
Close the lids of the steam case and place in the microwave. Cook in the microwave for 2 minutes and 15 seconds at 800watts.
Let the steam case sit untouched with the lids closed for an additional minute.
Remove the shrimp from the tray.
For a balanced meal, enjoy with half of an avocado and 1 cup of spinach with 1 tsp. of extra virgin olive oil.
