Easy Chicken Salad

Cook Time: 8 Minutes


  • 10 chicken tenderloins or 4 chicken breasts (boneless/skinless)
  • 3 carrots, peeled and diced
  • 4 celery stalks, diced
  • 1 sweet onion, diced
  • 1 tbsp sage
  • 2 tbsp paprika
  • 2 tbsp cayenne pepper
  • Mayo
  • 2 tbsp Dijon mustard
  • Salt
  • Pepper


In the Lékué steam case (large) place 2-3 tbsp water under the tray. Place the chicken on top of the tray. If using chicken breasts, cut them in half. Season the chicken with a pinch of salt and pepper. 
Close the lids, place in the microwave, and cook for 8 minutes at 800 watts.
While the chicken is steaming, prep the vegetables and set aside in a large bowl.
Remove the chicken from the steam case and cut into small, bite size pieces. Transfer the chicken to the vegetables.
Add the Dijon and enough mayo to suit your taste. Season with the sage, paprika, cayenne, salt and pepper.
Mix all ingredients together and taste. Add more salt, pepper, ...etc. if necessary.
