Jalapeno Cornbread

Cook Time: 15 Minutes Temperature: 375°F


  • 1 stick butter
  • 2/3 cup granulated sugar
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 1/2 tsp. baking soda
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tsp. kosher salt


Preheat the oven to 375F.

Dice the jalapenos into small pieces and add it to the cornmeal.

Melt the butter in the microwave or on the stove top.

Put the sugar in a large bowl or bowl of a stand mixer.

Once the butter is completely melted add it to the sugar and whisk together. Add the beaten eggs and continue whisking, making sure the eggs don't "cook" at all from the hot, melted butter.

Combine the baking soda and the buttermilk and add to the egg/sugar mixture. Continue whisking and add the salt, flour, and cornmeal.

Whisk until the batter is smooth.

Pour batter evenly into the Lekue Mini Brownie Mold. Put the mold on a baking sheet and place in the oven. Bake for 15 minutes.
