Rice With Black Beans

Cook Time: 16 Minutes


  • 1 onion, chopped
  • 2 cloves cloves garlic, finely minced
  • 2 tbsp olive oil
  • 1 1/3 cup water
  • 2/3 cup black bean liquid
  • 1/4 cup black beans
  • 1 cup long grain rice
  • Salt and pepper
  • Scallions and fresh cilantro, to garnish


Chop the onion and mince the garlic cloves. Put into the Lekue Rice Cooker with a pinch of salt and pepper and olive oil. Cook in the microwave for 2 minutes at 800watts. While that is cooking, drain the black beans, saving the liquid. Remove the rice cooker from the microwave; add the water, black bean liquid, rice, and black beans. Stir all together. Cook in the microwave and cook for 16 minutes at 800watts. Remove from the microwave, let rest for 1 minute. To serve, garnish with chopped scallions and fresh cilantro.
